summer is finally here.  the farmers markets are overflowing with incredible produce.  last sunday was a perfect evening to “not cook” one of my favorite summer meals, lemon cucumber tofu salad.  only a couple of deviations: i used regular old cucumbers, added capers, and went with toasted almonds instead of pine nuts.  those plus lemon, dill, avocado…what’s not to love?  over some cooked quinoa we had on hand, it was a perfect, light and tasty dinner.
