after getting the recipe for these incredibly DELICIOUS vegan truffles at a cooking class the other week, i could not help but whip up a quick batch yesterday. they are sooooo good. scary good.

here’s the recipe adapted from the peppermint truffle recipe I got from abby of abby’s table.

1 cup coconut butter (i had to warm mine up slightly in the microwave so it was mixable/pourable)

1 cup cocoa powder

1/2 tsp salt

3/4 cup maple syrup.

1 tsp vanilla

mix all ingredients in a large bowl until well blended.  place in fridge for at least an hour.  scoop mixture (you can use a small ice cream scoop or melon ball scooper or just a regular old spoon) and roll with hands into balls.  roll in cocoa powder.  Store in airtight container in fridge.  Let truffles come to room temperature before indulging – if you have the willpower for that.
